As a cocoa farmer and certified chocolate maker, I have always been fascinated by the unique history of cocoa originating in the Caribbean. Now known as a super food with loads of antioxidants, cocoa has been a valuable product for centuries. In fact, cocoa beans were once used as a form on money!
About 500 years ago, people living in the Caribbean used to mix their cocoa, sugar and rum and then added natural spices to give it a unique flavor.
